Cauliflower Is a Mildly Flavored Substitute for Carbohydrates

In the world of healthy, low-carb foods, cauliflower is considered a staple. For example, in terms of mainstream product lines, it continues to gain in popularity with mega brands such as Green Giant and Alexia Foods. Cauliflower Rice Cooks Quickly

Because cauliflower has a mild flavor, it is an excellent replacement for carbohydrates such as potatoes, rice, and wheat. Since this method takes less time than boiling or simmering grain rice with water, you won’t need to spend much time cooking. In addition, it’s a great way to squeeze more servings of vegetables into your diet.

You can create a filling side dish in just a few minutes with only a handful of ingredients. Mod Daily’s Cauliflower Rice Recipe calls for a head of medium cauliflower, rosemary, thyme, olive oil, sea salt, and freshly ground pepper. That’s it. Simple and delicious!

Prepare the Vegetables and Herbs

Rather than begin with the cauliflower rice recipe and its quick directions, let’s first discuss how to prepare the vegetable and herbs. I invite you to skip to the recipe if you are well versed in this area.

Cauliflower Rice Recipe Preparation – Food Processor

  1. Make sure the cauliflower is thoroughly washed and dried. *Do not skip this critical step.
  2. You can then slice it into four quarters. Once you remove the core break the pieces apart into florets.
  3. Place the cauliflower into a food processor in small batches.
  4. Turn on the food processor and blend at low speed for one minute.
  5. Next, blend the mixture for 1-1/2 to 2 minutes at high speed until it resembles coarse couscous.

*The recipe is super simple but takes an extra minute to remove moisture for better-tasting results.

Using the coarse shredding blade, attach the Fresh Prep Shredder to your KitchenAid Stand Mixer (make sure the mixer is unplugged while working on this).

Cauliflower Rice Preparation – KitchenAid Fresh Prep Shredder Attachment

  1. Make sure the cauliflower is thoroughly washed and dried. *Do not skip this critical step.
  2. You can then slice it into four quarters. Once you remove the core break the pieces apart into florets.
  3. Attach the Fresh Prep Shredder (Using the Course Shredding Blade) to your KitchenAid Stand Mixer (make sure the mixer is unplugged while attaching).
  4. With the speed set at 4 on your mixer, and bowl placed below, add a handful of florets into the Fresh Prep Shredder.
  5. Apply gentle pressure and watch how quickly your bowl fills with “rice.”

How to Prepare Fresh Rosemary for Our Cauliflower Rice Recipe

The best way to prepare rosemary is to wash it right before using it. The sprigs should be held by the stem and rinsed under cold water for a few seconds. After rinsing, pat the rosemary dry with a paper towel.

We recommend substituting 1/2 teaspoon of dried rosemary (medium cauliflower head) if you do not have a rosemary sprig handy. Add more as desired.


How To Prepare Fresh Thyme

It’s ideal to prepare Thyme just before use is to wash it right before use. Hold the sprigs by the stem and rinse them under cold water for a few seconds. After rinsing the Thyme, pat it dry with a paper towel or spin it in a salad spinner to make sure it is thoroughly dried.

How to Convert Fresh Thyme to Dried Thyme

In contrast to a tablespoon or cup, a sprig of thyme does not have a standard measurement or amount. Perhaps it is better to say that the amount is more variable. As its name suggests, a sprig is an approximately four to five-inch long stem or branch from a thyme plant.

Cauliflower Rice Recipe Ingredients

  • One medium cauliflower “riced” using your food processor or KitchenAid and shredding attachment
  • One teaspoon of olive oil
  • One sprig of fresh rosemary
  • One sprig of fresh thyme
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper

Optional Ingredients

  • 1/2 cup golden raisins or,
  • 1/2 cup chopped scallions and freshly grated parmesan cheese

Directions – Cauliflower Rice Recipe

  1. In a large sauté pan, heat olive oil on medium heat with rosemary and thyme to season oil.
  2. Once sizzling, remove stems of herbs and add cauliflower rice.
  3. Season with salt and pepper and occasionally stir till cauliflower browns slightly (about three minutes). Overheating riced cauliflower will cause the rice to become soggy. Instead, Sauté riced cauliflower in olive oil (not too much – stick to 1 teaspoon), which will be softer and more tender.
  4. (Optional) Add a handful of golden raisins and steam for two more minutes. Serve with your favorite main dish.
